What to eat in Puglia

Eating in Puglia is always a pleasure for the palate. Apulian cuisine is an example of cucina povera in the way that its recipes are characterized by simplicity as their ancient traditions want. Some examples are: Orecchiette with turnip tops, Barese Focaccia, Tiella with rice, potatoes and mussels, fried Panzerotti, Brasciole, Ciceri and Tria, Cartellate, Scapece, Cacioricotta puglise and Altamura’s Bread.
